1 knob fresh ginger, sliced
2 bay leaves
1 tbsp apple cider vinegar (helps draw minerals from the bones)
1 bunch fresh parsley
2 tsp sea salt
10–12 cups water

Shiitake mushrooms – support immunity and gut health.
Lemon juice – adds vitamin C and brightens flavour.
Method:
Place bones, vegetables, vinegar, and spices into a large stockpot.
Cover with water and bring to the boil.
Reduce heat to low and simmer gently for 6–24 hours (the longer, the richer).
Strain the broth and discard solids.
Add salt and parsley, then sip warm or store in jars in the fridge/freezer.
