Curry: Comfort and Healing

Few dishes bring comfort like a warm curry. Rich in spices, vegetables, and slow-cooked flavour, curries are not only delicious but also deeply healing for both body and mind.

Spices like turmeric, ginger, and cumin are powerful anti-inflammatories, while coconut milk provides healthy fats to nourish the nervous system.


Wholesome Curry Recipe

Ingredients:

  • 2 tbsp coconut oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 knob ginger, grated

  • 2 tsp turmeric

  • 2 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp paprika

  • 2 sweet potatoes, cubed

  • 1 cup red lentils, rinsed

  • 1 can coconut milk

  • 3 cups vegetable stock

  • 2 cups spinach or kale

  • Sea salt + black pepper to taste

  • Fresh coriander to garnish


Method:

  1. Heat coconut oil in a pot, sauté onion, garlic, and ginger until fragrant.

  2. Stir in spices and cook for 1 minute.

  3. Add sweet potato, lentils, coconut milk, and stock.

  4. Simmer gently for 25–30 minutes until lentils are soft.

  5. Stir in greens, season, and serve topped with fresh coriander.
